1. Add the potato to the hot oil in a large frying pan and cook over a low/medium heat for around 20 mins.
2. Add the chopped onion and cook for a further 10 minutes. The potato should be almost cooked through now.
3. Add the corned beef, baked beans and tomato ketchup. Season with lots of pepper and salt to taste. Stir to mix.
4. Continue cooking until heated through. Serve with a poached egg on top.
