Forgotten Cookies

1. Preheat oven to Gas 4/180C, and prepare baking sheets by lining with lightly buttered foil (you can use a non-stick reusable cooking mat)

2. Whisk egg whites to soft peaks, and then add sugar slowly, 1 tablespoon at a time, whisking constantly until stiff and glossy.

3. Add vanilla essence and pinch of salt in the last stage, so it’s whisked in.

4. Fold in the choc-chips and chopped nuts, and use a teaspoon to make small mounds

5. This should make around 30 cookies.

6. Put into the pre-heated oven, close the door and turn the oven out. Go to bed and forget about them till next morning!
