Pad Thai

Serves 4

1. Beat the eggs with 1tbsp water and make an omelette with the mixture. Turn out onto a plate and reserve for later.

2. Mix the soy sauce, sweetener and nam pla and reserve for later.

3. Heat a large non-stick wok and add the king prawns until most of them have turned pink. Add the pepper, chilli, broccoli/mushrooms and stir-fry for 3 minutes.

4. Add the beansprouts, mangetout and spring onions and stir-fry for 3 minutes.

5. Add the noodles; mix well and cook for 3 minutes.

6. Roll up and slice the egg. Add the egg and the soy mixture and mix thoroughly but carefully. Heat through for a minute or two. Serve with the lime wedges.
